WHY?!
After a weekend of eating way too many delicious Raspberry Oatmeal Cookie Bars and Zucchini Brownies for dinner I realized I needed to eat a little bit healthier. Low carb diet? Vegetarian? Clean Eating? What should I do? I don't know. But I wouldn't want to eat like those crazy vegan people. I love eggs, chicken, and other animal products. So I started looking at some disgusting vegan recipes on Pinterest. Oh, wait! Some of them actually looked delicious. I could be vegan for a day or two. Well, if I'm going to do it for a day or two, I might as well do it for a week. So here I am, leaving some of my favorite foods behind to do my own little Vegan for a Week Challenge.
